Roasted/Grilled Vegetable Medley

Introduction
Summertime is a great time to go to your local farmers markets and pick out your favorite fresh vegetables. You can put anything you want in this roasted vegetable medley.

Steps
How to make
Place all sliced vegetables in a pan and mix all other ingredients. Toss lightly. Place in oven for 20-25 minutes at 350º. Can also grill until vegetables are tender.
Ingredients
2 small yellow summer squash sliced
1 medium zucchini sliced
1 small white onion sliced
1 large tomato sliced
2 tbsp olive oil
2 tbsp grated Parmesan Cheese
1/2 tsp seasoned Salt
1/2 tsp. basil
1/2 tsp thyme
